Evenly sprinkle 3-4 tbs. of seasoning onto a 3-4 lb. chicken (including under any loose skin) Cut 3-4 potatoes into wedges Add 4 chopped garlic cloves to 4 tbs. olive oil in roasting pan Place chicken in pan, skin side down Cover, bake at 375° for 30 minutes Turn chicken and add potatoes (coat potatoes in pan juices adding additional seasoning) Uncover, bake additional 30-40 minutes Serve with pan juices
